My Recipe - Tagliatelle with Ricotta and Cherry Tomatoes

Picture this... after walking more than 20000 steps through the streets of Paris, Benita and I find this cute as restaurant just off Rue Saint-Honore.  We sit down, shopping bags surround us, order some Rose, indulge in some people watching and eat this delicious spaghetti with ricotta and fresh tomato.  We still talk about this dish...

Sounds simple doesn't its, without a recipe or what ingredients, it really isn't.  I have had many attempts as you really need to get the balance right.  I think I have it!  So here is my version of this dish:


2 x punnet of cherry tomatoes
500 g of your favourite pasta (I used tagliatelle this time)
400 g fresh ricotta
3 cloves garlic finely minced
2 tbs olive oil
1 cup freshly grated parmesan (or pecorino) cheese (approx you might like less or more!)
salt & cracked pepper

I really love cherry tomatoes, usually buy at least
5 punnets every week!

Tagliatelle is the pasta of choice today

You boil the water, add some salt and once boiled add the pasta.  Cook the pasta al dente.  Set aside 1/2 cup of the boiled pasta water.

While the water is boiling and the pasta is cooking...

Heat the olive oil in a deep fry pan, add the tomatoes.  Add some salt to the tomatoes and let them cook for about 3minutes, add the garlic and gently stir, making sure the garlic doesn't burn.

Add pepper. You could even use some chilli flakes if you choose to and like a bit of heat.

Add the pasta water and cooked pasta to the tomato and garlic in the pan.  The pasta water gives the sauce a creamy taste and I find it binds the sauce with the pasta. I always add about a ladle full of pasta water to most of my sauces. Add more salt.

Stir through the ricotta, making sure the pasta is coated with the tomato and garlic. Add the parmesan and stir it all together.

You can never have too much parmesan

Serve in a bowl add extra parmesan and finish with extra cracked pepper...

Voila! Easy and quick!
