Friends for dinner...

I have been out of action for the last few months and I haven't been able to do many of the things I enjoy.

Having friends over for dinner is one of the things I love doing more than anything... love planning the menu, setting the table... preparing... music blaring... dancing... cooking... sipping some wine... friends hanging around the kitchen bench... you're getting the drift!

Last night I finally braved it and invited 2 couples, good friends of ours.  I had to keep it simple due to dietary confinements!

The Menu

Fig, Buffalo Mozzarella (Italian) & Prosciutto (Italian)

Salmon with  Dill 
Warm Kipfler Potato Salad
Baked Asparagus

Mandarin Flour-less Cake with Vanilla Ice-Cream

A relatively easy Menu as I had to also make a great big Fettucini Carbonara for 7 hungry teenagers (they were in man cave totally away from us!).


A beautiful honey gold colour... the end result!


6 Eggs
240 grms almond meal
240 grms caster sugar
3 medium or 4 small mandarins

1. Pre-heat oven to 160 degrees.  Grease a 24cm springform tin.

2. Boil the mandarins whole skin and all for 1.5 hours.  Allow to cool and gently with your hands squeeze out the pips.  Blend mandarins in a food processor.  Set aside.

3. Mix eggs and sugar until smooth.  Add the almond meal and mix thoroughly.

4. Add mandarin to the mixture and mix it in.

5. Pour mixture in the tin and bake for about 1 hour 10 minutes.

6. Allow to cool.  Sift icing sugar (oops, I forgot to do that last night!) and serve with either cream or ice cream.

Cooling ... ready to be eaten! 

It has to be one of the easiest cakes I have made... Try it and let me know!
